Zucchini Pizza Bites

Ingredients
  

  • 1 medium zucchini firm and fresh, sliced into 1/8 inch rounds
  • 1/3 cup pizza sauce use a thick sauce to prevent running
  • 1 cup mozzarella cheese grated small, chop pre-shredded finer for better melt
  • 12 slices pepperoni chopped, or use mini pepperoni
  • 1 tsp olive oil for greasing the baking sheet

Method
 

  1. Position your oven rack at the highest level and preheat your broiler on high.
  2. Use a sharp knife to slice the zucchini into rounds about 1/8 inch thick. Do not go thicker than 1/4 inch.
  3. Lightly grease a baking sheet with olive oil. Spread the zucchini rounds out in a single layer.
  4. Spoon 1/2 to 1 teaspoon of pizza sauce onto the center of each round. Do not spread to the edges.
  5. Top each round with a small pinch of shredded mozzarella, then add chopped pepperoni on top.
  6. Broil for 3 to 6 minutes, watching closely, until the cheese is bubbly and golden. Serve immediately.

Notes

Pat zucchini rounds dry before topping to prevent sogginess. Best served fresh. Reheat under the broiler for 2 to 3 minutes rather than the microwave.
