Method
- Cook bacon in a skillet over medium heat or bake at 400 degrees F for 15 to 18 minutes until crispy. Transfer to a paper-towel-lined plate and tear each strip in half to make 8 half-strips.
- Spread softened butter on both sides of each bread slice. Toast in a skillet over medium heat for 1 to 2 minutes per side until lightly golden. Do not over-toast. Set aside.
- Lay tomato slices on a paper-towel-lined plate for 2 to 3 minutes to absorb excess moisture. Season with salt and pepper.
- Spread 1.5 tablespoons of mayo on one slice of toasted bread. Layer on lettuce leaves, then seasoned tomato slices. Pile all 8 bacon half-strips on top, then add avocado strips. Season avocado lightly with salt and pepper.
- Spread remaining mayo on the second slice of toast. Close the sandwich, press gently, and slice in half with a serrated knife. Serve immediately.
Notes
For the best results use thin-cut bacon and a perfectly ripe tomato. Letting tomato slices rest on a paper towel prevents sogginess. Try garlic aioli, chipotle mayo, or sriracha mayo as sauce variations.
