The Best BLT Sandwich

Ingredients
  

  • 2 slices hearty white bread thick slices with soft crust
  • 4 tsp butter softened, for toasting
  • 3 tbsp mayonnaise full-fat preferred
  • 4 slices thin-cut bacon
  • 2-4 leaves green leaf lettuce washed and dried
  • 1 ripe tomato vine-ripe or heirloom preferred, sliced 3/8 inch thick
  • 0.5 ripe avocado sliced into strips
  • 1 pinch salt and pepper to taste

Method
 

  1. Cook bacon in a skillet over medium heat or bake at 400 degrees F for 15 to 18 minutes until crispy. Transfer to a paper-towel-lined plate and tear each strip in half to make 8 half-strips.
  2. Spread softened butter on both sides of each bread slice. Toast in a skillet over medium heat for 1 to 2 minutes per side until lightly golden. Do not over-toast. Set aside.
  3. Lay tomato slices on a paper-towel-lined plate for 2 to 3 minutes to absorb excess moisture. Season with salt and pepper.
  4. Spread 1.5 tablespoons of mayo on one slice of toasted bread. Layer on lettuce leaves, then seasoned tomato slices. Pile all 8 bacon half-strips on top, then add avocado strips. Season avocado lightly with salt and pepper.
  5. Spread remaining mayo on the second slice of toast. Close the sandwich, press gently, and slice in half with a serrated knife. Serve immediately.

Notes

For the best results use thin-cut bacon and a perfectly ripe tomato. Letting tomato slices rest on a paper towel prevents sogginess. Try garlic aioli, chipotle mayo, or sriracha mayo as sauce variations.
