- Preheat oven to 450 degrees F. Place pizza stone in the oven now if using so it heats up fully.
- Heat a skillet over medium heat and add 1 tablespoon olive oil. Add chopped onions and cook for 10 to 15 minutes, stirring occasionally, until deeply golden and caramelized. Set aside.
- Lay a sheet of parchment paper on a work surface and dust lightly with flour. Roll pizza dough into a 13 to 14 inch circle. Build up the edges with your fingers to form a crust border.
- Brush or drizzle 1 tablespoon olive oil over the entire surface of the dough including the crust edges.
- Slide parchment with dough onto the hot pizza stone or transfer to a baking sheet. Par bake at 450 degrees F for 1 minute. Remove from oven.
- Spread mustard and BBQ sauce over the par-baked crust. Layer on American cheese slices, chopped hot dogs, caramelized onions, and sauerkraut if using. Finish with shredded mozzarella.
- Return to oven and bake for 10 to 12 minutes until cheese is melted with golden brown spots on top. Let rest 2 minutes before slicing.
Notes
Par baking the crust for 1 minute before adding toppings is key for preventing a soggy bottom. Leftover brats or grilled sausage work great in place of hot dogs. Store leftovers in the fridge for up to 3 days and reheat in the oven at 375 degrees F or in an air fryer at 350 degrees F.
