Ingredients

  • 1 tbsp olive oil for caramelizing onions
  • 1/2 cup onion chopped
  • 1 medium pizza crust store-bought or homemade
  • 1 tbsp olive oil for brushing dough
  • 2 tbsp mustard yellow or spicy brown
  • 2 tbsp BBQ sauce or ketchup
  • 8 thin slices American cheese up to 9 slices
  • 2 hot dogs chopped into rounds, up to 4 hot dogs
  • 3/4 cup shredded mozzarella cheese
  • sauerkraut optional, squeezed very dry

Equipment

  • Pizza stone or baking sheet
  • Parchment paper
  • Skillet
  • Pastry brush
  • Pizza peel or flat baking sheet

Method

  1. Preheat oven to 450 degrees F. Place pizza stone in the oven now if using so it heats up fully.
  2. Heat a skillet over medium heat and add 1 tablespoon olive oil. Add chopped onions and cook for 10 to 15 minutes, stirring occasionally, until deeply golden and caramelized. Set aside.
  3. Lay a sheet of parchment paper on a work surface and dust lightly with flour. Roll pizza dough into a 13 to 14 inch circle. Build up the edges with your fingers to form a crust border.
  4. Brush or drizzle 1 tablespoon olive oil over the entire surface of the dough including the crust edges.
  5. Slide parchment with dough onto the hot pizza stone or transfer to a baking sheet. Par bake at 450 degrees F for 1 minute. Remove from oven.
  6. Spread mustard and BBQ sauce over the par-baked crust. Layer on American cheese slices, chopped hot dogs, caramelized onions, and sauerkraut if using. Finish with shredded mozzarella.
  7. Return to oven and bake for 10 to 12 minutes until cheese is melted with golden brown spots on top. Let rest 2 minutes before slicing.

Notes

Par baking the crust for 1 minute before adding toppings is key for preventing a soggy bottom. Leftover brats or grilled sausage work great in place of hot dogs. Store leftovers in the fridge for up to 3 days and reheat in the oven at 375 degrees F or in an air fryer at 350 degrees F.
