  • 14 ounces pre-cooked chicken or turkey sausage sliced into 1/2-inch rounds
  • 2 medium sweet potatoes peeled and diced into 1/2-inch cubes
  • 2 cups broccoli florets cut into 1-inch pieces
  • 1 tablespoon unsalted butter
  • 4 cloves garlic minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • salt to taste
  • black pepper to taste
  • 2 tablespoons fresh parsley finely minced

Method
 

  1. Preheat your oven to 400°F and position a rack in the middle. Line an 18x13-inch sheet pan with parchment paper.
  2. Arrange the sliced sausage, diced sweet potatoes, and broccoli florets in a single layer on your prepared sheet pan. Leave space between pieces to prevent steaming.
  3. Melt the butter in a small saucepan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the honey, soy sauce, apple cider vinegar, salt, and black pepper. Let this simmer for 2 to 3 minutes, stirring occasionally.
  4. Pour the warm honey garlic glaze evenly over everything on your sheet pan. Let it cool for 30 seconds, then toss everything with tongs until every piece is thoroughly coated.
  5. Roast for 25 to 30 minutes, stirring everything once at the 12 to 15 minute mark. The dish is ready when the sweet potatoes are fork-tender and the sausage has developed golden-brown edges.
  6. Remove from the oven and immediately sprinkle with the freshly minced parsley before serving.

Notes

Use pre-cooked sausage for best results and food safety. Substitute Italian sausage for a richer taste or use plant-based sausage for a vegetarian option. For extra heat, add red pepper flakes to the honey glaze. Store leftovers in an airtight container in the refrigerator for up to 4 days.
