Method
 

  1. Preheat the Oven: Set oven to 400°F. Lightly grease a 9x13-inch baking dish and set aside.
  2. Soften the Onion: Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 3 to 4 minutes, stirring occasionally, until softened and translucent.
  3. Brown the Turkey: Add ground turkey and cook for 5 to 6 minutes, breaking apart with a spatula, until fully browned with no pink remaining.
  4. Add Vegetables and Spices: Stir in minced garlic, diced bell pepper, and diced sweet potatoes. Add smoked paprika, cumin, thyme, salt, and pepper. Cook for 3 to 5 minutes, stirring to coat everything evenly. Taste and adjust seasoning before transferring.
  5. Bake Covered: Transfer mixture to the prepared baking dish and spread into an even layer. Cover tightly with aluminum foil and bake for 25 minutes. Test sweet potatoes with a fork; they must be completely fork-tender before proceeding. If still firm, cover and bake 5 more minutes.
  6. Add Cheese and Finish: Remove foil, sprinkle shredded cheese evenly across the top, and bake uncovered for 10 to 15 minutes until cheese is melted, bubbly, and lightly golden. Garnish with fresh parsley or cilantro and serve hot.

Notes

Dice sweet potatoes into half-inch uniform cubes for even cooking. Never skip the foil step; it steams the sweet potatoes to tenderness before the cheese layer. Always test sweet potatoes with a fork before adding cheese. Taste and adjust seasoning at the skillet stage before baking. Can be assembled unbaked, covered, and refrigerated overnight; add 5 extra minutes of covered bake time when starting cold. Freeze individual portions before the cheese layer for up to 3 months.
