Ingredients
  

  • 4 boneless skinless chicken breasts or thighs
  • 1.5 pounds baby Yukon Gold or red potatoes halved
  • 4 cloves garlic minced
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons olive oil divided
  • 2 teaspoons Italian seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt divided
  • 1/2 teaspoon black pepper divided
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine 1 tablespoon olive oil, Italian seasoning, smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add the chicken and toss to coat well.
  3. In another bowl, toss halved potatoes with 2 tablespoons olive oil, minced garlic, grated Parmesan, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until evenly coated.
  4. Spread seasoned potatoes on a baking sheet in a single layer and place the chicken pieces on top.
  5. Bake for 30 minutes or until the chicken reaches an internal temperature of 165°F and the potatoes are golden brown and fork-tender.
  6. Remove from oven, let rest for 5 minutes, then garnish with chopped parsley before serving.

Notes

For crispier potatoes, don't overcrowd the pan. Use fresh Parmesan for best flavor and melting results. Let chicken rest before slicing to retain juices. Can substitute chicken thighs for breasts if preferred.
