Ingredients
  

  • 4 boneless skinless chicken breasts about 1.5 lbs total, similar thickness recommended
  • 4 cloves garlic minced
  • 1/2 cup unsalted butter melted
  • 1/4 cup fresh parsley chopped, plus extra for garnish
  • 2 tbsp fresh lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper

  • Medium mixing bowl
  • Meat thermometer
  • Paper towels

Method
 

  1. Preheat oven to 400 degrees F. Lightly grease a 9x13 inch baking dish with butter or cooking spray.
  2. In a medium bowl, combine melted butter, minced garlic, chopped parsley, lemon juice, salt, and pepper. Stir until well combined.
  3. Pat each chicken breast dry with paper towels on both sides. Season lightly with salt and pepper.
  4. Arrange chicken in the baking dish in a single layer without overlapping. Pour the garlic butter mixture evenly over each piece.
  5. Bake uncovered for 25 to 30 minutes, or until internal temperature reaches 165 degrees F. For a crispier top, broil for the last 2 to 3 minutes watching closely.
  6. Remove from oven and rest for 5 minutes before serving. Garnish with fresh parsley.

Notes

Pat chicken dry before baking for best browning. Do not overlap chicken in the dish. Let rest 5 minutes after baking. The leftover garlic butter sauce is excellent over rice or pasta.
