Ingredients
  

  • 1 lb ground turkey
  • 1 cup fresh cranberries
  • 1 cup breadcrumbs
  • 1 medium onion finely chopped
  • 1 stalk celery finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 large eggs
  • ½ cup chicken broth
  • olive oil for drizzling

Method
 

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the breadcrumbs, cranberries, finely chopped onion, celery, minced garlic, dried sage, dried thyme, salt, and pepper. Mix thoroughly.
  3. Add the ground turkey, eggs, and chicken broth to the mixture. Using your hands, incorporate everything thoroughly until the mixture holds together when squeezed.
  4. Wet your hands slightly and scoop about 2 tablespoons of mixture. Roll into balls approximately 1 to 1½ inches in diameter. Place each ball on the prepared baking sheet, spacing them about an inch apart.
  5. Drizzle the stuffing balls with olive oil. Bake for 20-25 minutes until they are golden brown and the internal temperature reaches 165°F.
  6. Remove from the oven and let them cool for 3-5 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze in a single layer, then transfer to a freezer bag for up to 3 months. Reheat at 350°F for 10-15 minutes.
