Ingredients
  

  • 2 cups orzo pasta
  • 1 tablespoon olive oil extra virgin preferred
  • 1 pound chicken sausage sliced, Italian-seasoned recommended
  • 2 cups broccoli florets cut into bite-sized pieces
  • 3 cloves garlic minced
  • 4 cups chicken broth low-sodium recommended
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup Parmesan cheese freshly grated
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. In a large pot, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Stir in the broccoli florets and cook for 2-3 minutes until they start to soften.
  4. Add the orzo, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to a simmer.
  5. Cover and cook for about 10-12 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.
  6. Remove from heat and stir in the grated Parmesan cheese until melted and well combined.
  7. Serve hot, garnished with fresh parsley.

Notes

For a creamier version, stir in 1/4 cup of heavy cream just before serving. You can substitute the chicken sausage with turkey sausage or plant-based sausage for a different flavor profile. If the orzo absorbs all the liquid before it's tender, add a bit more broth.
