Ingredients
  

  • 1 cup breaded chicken breast cooked and cut into bite-sized pieces, air fryer or oven-baked preferred
  • 1/2 cup cottage cheese full-fat preferred for creamier texture
  • 1/2 cup marinara sauce warmed before using
  • 1/4 cup shredded mozzarella cheese
  • 2 tbsp fresh grated Parmesan cheese freshly grated preferred over pre-shredded
  • fresh basil leaves torn if large

Method
 

  1. Spoon the cottage cheese into the bottom of your serving bowl and spread into an even layer. For a smoother texture, whisk it briefly in a separate bowl before adding.
  2. Arrange the cooked bite-sized chicken pieces evenly over the cottage cheese layer. Cut any large pieces down before adding.
  3. Spoon the warmed marinara sauce over the chicken, covering as much of the surface as possible. Warm sauce is important here as it helps soften the mozzarella in the next step.
  4. Sprinkle shredded mozzarella evenly over the top and let sit 30 to 60 seconds. For more melted cheese, microwave the assembled bowl for 20 to 30 seconds.
  5. Finish with freshly grated Parmesan and torn basil leaves. Serve immediately.

Notes

Warm the marinara before assembling for best results. Substitute cottage cheese with plain full-fat Greek yogurt if preferred. For a vegetarian version, swap chicken for pan-fried breaded eggplant or baked tofu. Store all components separately in the fridge for up to 3 days and assemble fresh before serving. Do not pre-assemble or the texture becomes watery.
