Ingredients
  

  • 3-4 boneless, skinless chicken breasts cut into bite-sized pieces
  • 8 oz lo mein noodles fresh or dried
  • 1 red bell pepper thinly sliced
  • 1 yellow bell pepper thinly sliced
  • 2 carrots julienned
  • 2 green onions chopped, white and green parts separated
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 3 cloves fresh garlic minced
  • 2 tbsp cooking oil vegetable or peanut oil

Method
 

  1. Cook lo mein noodles according to package instructions until just al dente (about 4-5 minutes). Drain immediately, rinse under cold water to stop cooking, and toss with a few drops of oil to prevent sticking.
  2. Heat a large wok or skillet over medium-high heat. Add 1 tablespoon oil and when it shimmers, add chicken pieces in a single layer. Cook undisturbed for 2 minutes until golden, then stir and cook until no longer pink inside, about 4-6 minutes more. Remove to a plate.
  3. Add remaining oil to the same pan. Stir in bell peppers and carrots, cooking for 2-3 minutes until vegetables are tender-crisp.
  4. Add the white parts of green onions and minced garlic to the vegetables, stirring constantly for 30 seconds until fragrant.
  5. Return chicken to the pan along with cooked noodles, soy sauce, and sesame oil. Toss everything together with tongs for 2-3 minutes until well combined and heated through. Garnish with reserved green onion tops and serve immediately.

Notes

For enhanced flavor, marinate the chicken in 2 tablespoons soy sauce and 1 clove minced garlic for at least 30 minutes before cooking. Feel free to add other vegetables like broccoli, mushrooms, or snow peas.
