Ingredients

  • 8 oz rotini pasta half a standard box
  • 2 cups grilled chicken diced
  • 8 oz turkey bacon cooked and crumbled
  • 1 heart romaine lettuce chopped
  • 1/2 cup shredded Parmesan cheese
  • 3/4 cup Caesar salad dressing plus more to taste

Equipment

  • Large pot
  • Large mixing bowl
  • Colander
  • Skillet

Method

  1. Cook rotini pasta according to package directions until al dente, about 8 to 9 minutes.
  2. Drain pasta well and rinse under cold running water until completely cooled. Stir gently while rinsing to prevent clumping.
  3. Transfer cooled pasta to a large mixing bowl. Add diced grilled chicken, crumbled turkey bacon, chopped romaine, and shredded Parmesan.
  4. Pour in 3/4 cup Caesar dressing and toss everything together until evenly coated. Add more dressing if needed.
  5. Serve immediately for best texture. Add romaine just before serving if preparing ahead to keep it crisp.

Notes

Add romaine just before serving if prepping ahead. Stir in extra dressing before serving if pasta has absorbed too much. Add croutons right before serving for extra crunch. Leftovers keep up to 3 days refrigerated.
