Burger Bowls with Special Sauce

Ingredients
  

  • 1.5 tsp smoked paprika for spice mix
  • 1 tsp garlic powder for spice mix
  • 1 tsp onion powder for spice mix
  • 1 tsp dried oregano or mixed herbs for spice mix
  • 0.5 tsp salt for spice mix
  • 0.25 tsp black pepper for spice mix
  • 2-3 medium potatoes washed, skin on, cut into chips, patted completely dry
  • 2 tbsp olive oil divided: 1 tbsp for chips, 1 tbsp for beef
  • 1 lb lean ground beef 90/10 lean recommended
  • shredded lettuce as much as desired
  • cheese dairy-free or regular, shredded or sliced
  • pickle slices
  • 4 tbsp mayonnaise for burger sauce
  • 1 tbsp ketchup for burger sauce
  • 1 tsp mustard Dijon or yellow, for burger sauce
  • 1 tsp pickle juice straight from the pickle jar, for burger sauce
  • 0.5 tsp garlic powder for burger sauce
  • 0.5 tsp smoked paprika for burger sauce

Method
 

  1. Combine all spice mix ingredients in a small bowl and set aside.
  2. Wash and cut the potatoes into chip-sized pieces. Pat completely dry with paper towels. Toss in a large bowl with 1 tablespoon olive oil and half the spice mix until every piece is evenly coated.
  3. Cook the chips: Oven method: spread in a single layer on a baking sheet and roast at 400°F (200°C) for 30-40 minutes, flipping once halfway, until golden and crispy. Air fryer method: cook at 400°F for about 20 minutes, shaking the basket every 5-7 minutes, until deep golden with crispy edges.
  4. While the chips cook, heat the remaining tablespoon of olive oil in a large frying pan over high heat. Add the ground beef and break apart with a wooden spoon. Once browned, add the remaining spice mix. Continue cooking until the beef is deeply browned and all excess liquid has fully evaporated.
  5. Stir together all burger sauce ingredients in a small bowl. Taste and adjust seasoning with a pinch more salt or extra pickle juice if desired.
  6. Build the bowls. Start with crispy chips, then add shredded lettuce, seasoned beef, cheese, and pickle slices. Drizzle burger sauce generously over the top and serve immediately while the chips are still hot and crispy.

Notes

Store all components separately in airtight containers for up to 3 days. Reheat beef in a skillet or microwave. Reheat chips in the air fryer or oven at 400°F for a few minutes to restore crispiness. Always assemble fresh right before eating for the best texture. Optional toppings: sliced avocado, crumbled crispy bacon, fried egg with runny yolk, sliced tomato and red onion.
