- Preheat oven to 400 degrees F. Spray a casserole dish with cooking spray.
- Heat olive oil in a small skillet over medium heat. Add minced garlic and cook for 1 to 2 minutes, stirring constantly, until translucent and fragrant. Remove from heat before it browns.
- Place chicken breasts in the casserole dish and season both sides with salt and pepper.
- Stir brown sugar into the sauteed garlic until combined. Spoon the mixture evenly over the top of each chicken breast.
- Bake uncovered for 20 to 25 minutes, or until internal temperature reaches 165 degrees F. If sugar begins to burn at the edges before chicken is done, remove burnt bits with a spoon and return to oven.
Notes
Double the sauce if you want extra to drizzle over rice. Add red pepper flakes or onion powder for more depth. Chicken thighs work equally well. Larger breasts may need up to 30 to 35 minutes.
