Ingredients

  • 1 lb ground beef 80/20 blend recommended for best juiciness
  • 4 large flour tortillas burrito size preferred
  • 1/2 cup Thousand Island dressing classic brand recommended
  • 1/2 cup shredded iceberg lettuce romaine works too
  • 1/2 cup chopped dill pickles
  • 1/4 cup diced white or yellow onion
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tbsp olive oil for toasting wraps
  • salt and pepper to taste

Equipment

  • Large skillet
  • Small mixing bowl
  • Wooden spoon or spatula
  • Cutting board and knife

Method

  1. Heat a large skillet over medium heat. Add ground beef and break apart with a wooden spoon. Cook for 5 to 7 minutes until fully browned with no pink remaining. Season with salt and pepper, drain excess fat if needed, then remove from heat and set aside.
  2. In a small bowl, mix Thousand Island dressing with a small pinch of salt and pepper to make the special sauce.
  3. Lay the tortillas flat on a clean surface. Spread a generous spoonful of the special sauce in the center of each tortilla, leaving a 1-inch border around the edges.
  4. Divide the cooked beef evenly across all four tortillas on top of the sauce. Layer on shredded lettuce, chopped pickles, diced onions, cheddar cheese, and mozzarella cheese.
  5. Fold in the left and right sides of each tortilla first, then roll tightly from the bottom up. Heat olive oil in the skillet over medium heat. Place wraps seam side down and cook for 2 to 3 minutes per side until golden brown and crispy. Slice in half and serve immediately.

Notes

Use 80/20 ground beef for best juiciness. Drain excess fat after browning if needed. Add a dash of hot sauce to the Thousand Island dressing for a spicier version. Do not overfill wraps or they will be hard to roll. Store in airtight container in refrigerator for up to 2 days. Reheat in a dry skillet or air fryer at 350F for best crispy results.
