  • 1 lb boneless chicken thighs or breasts Thighs recommended for juicier results

  • 1 tsp black pepper
  • 1/2 cup mayonnaise Or Greek yogurt for a lighter option
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha Adjust to your heat preference
  • 1 tbsp fresh lime juice Fresh squeezed preferred
  • 8 slider buns Whole wheat or gluten-free options work well
  • 1 cup fresh lettuce Shredded or whole leaves
  • 1 medium tomato Sliced
  • 1/2 cup pickled vegetables Optional
  • 1/4 cup cilantro or green onions Optional garnish
  • 1 medium avocado Optional, sliced

Method
 

  1. Preheat your oven to 375 degrees F. Pat the chicken dry, season both sides with salt and pepper, and place on a lightly greased baking sheet in a single layer without crowding.
  2. Bake for 15 to 20 minutes until golden and cooked through, reaching an internal temperature of 165 degrees F. Add a few extra minutes for thicker pieces.
  3. While the chicken bakes, whisk together mayonnaise, sweet chili sauce, sriracha, and fresh lime juice until smooth. Let the sauce rest at room temperature for at least 30 minutes to allow the flavors to fully develop.
  4. Let the cooked chicken rest for 5 minutes, then slice or shred. Layer onto slider buns, drizzle generously with Bang Bang sauce, and top with lettuce, tomato, and any optional toppings. Serve immediately.

Notes

Make the Bang Bang sauce up to 24 hours ahead for deeper flavor. Store in the fridge and bring to room temperature before serving. Store chicken and sauce separately for up to 2 days. Reheat chicken in the oven at 375 degrees F for 10 to 15 minutes before assembling fresh sliders. Total time includes 30 minutes sauce resting time.
