Ingredients

  • 6 hot dogs all-beef recommended
  • 6 slices bacon regular or thick-cut
  • 12 toothpicks to secure bacon ends
  • 6 hot dog buns
  • 2 tbsp butter or mayonnaise for grilling buns
  • ketchup, mustard, mayonnaise for serving
  • 1 tbsp butter for topping
  • 1/2 onion sliced
  • 1 green pepper sliced into bite-size strips
  • 1 jalapeno thinly sliced, membrane removed
  • salt and pepper to taste

Equipment

  • Outdoor grill
  • Large skillet
  • Toothpicks
  • Tongs

Method

  1. Heat your grill to low heat.
  2. Wrap one slice of bacon tightly around each hot dog in a spiral. Secure both ends with toothpicks pushed in as far as possible.
  3. Grill the bacon wrapped hot dogs on low heat for 8 to 10 minutes, turning every couple of minutes until the bacon is evenly crispy and golden on all sides.
  4. While the hot dogs cook, melt butter in a large skillet over medium heat. Add sliced onion, green pepper, and jalapeno. Saute for 6 to 8 minutes until softened. Season with salt and pepper.
  5. When hot dogs are nearly done, spread buns with butter or mayonnaise and place cut-side down on the grill for 1 to 3 minutes until golden with grill marks.
  6. Remove toothpicks. Top each hot dog with the onion and pepper mixture and your preferred condiments. Serve immediately.

Notes

Use thick-cut bacon for jumbo hot dogs. For oven cooking, bake at 400 degrees F on a wire rack for 20 to 25 minutes, turning halfway. Store leftovers in an airtight container for up to 3 days and reheat in a skillet or air fryer for best texture.
