Ingredients
  

  • 2 slices bread sourdough, wheat, Italian, or French loaf, 1/2 inch thick
  • 1 large avocado ripe, Hass preferred
  • 0.25 tsp lemon juice fresh squeezed
  • 0.25 tsp kosher salt
  • 0.125 tsp black pepper
  • 1 tsp extra-virgin olive oil for drizzling
  • 1 tsp fresh parsley chopped, optional garnish

Method
 

  1. Toast bread slices in a toaster until deeply golden brown. If using the oven, place on a baking sheet and broil 6 inches from the heating element for 1 to 3 minutes per side. Watch closely to avoid burning.
  2. Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Add lemon juice, kosher salt, and black pepper.
  3. Mash the avocado with a fork, pressing about 10 to 15 times to reach a chunky, spreadable texture. Do not over-mash.
  4. Spread the avocado mixture evenly across both slices of toast, edge to edge. Drizzle with olive oil, season with a final pinch of salt and pepper, and garnish with fresh parsley if desired. Serve immediately.

Notes

Note: Total time of 20 minutes applies to the Simple Avocado Toast. The Bacon and Eggs variation requires an additional 8 to 10 minutes for cooking bacon and frying eggs. For the Everything variation, slice avocado instead of mashing and layer over cream cheese. Avocado toast is always best eaten immediately after assembly.
