30-Minute Mozzarella Chicken Skillet

Cheesy mozzarella chicken is an insanely delicious high protein low-carb and keto friendly weeknight dinner recipe at just 4g net carbs! It's pan seared chicken nestled in tomato sauce and topped with melty mozzarella, then baked to perfection.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion finely chopped
  • 3-4 cloves garlic minced or grated
  • 15 oz crushed tomatoes 1 can, or your favorite marinara
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon crushed red pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 boneless, skinless chicken breasts small-medium size
  • 8 oz fresh or shredded mozzarella
  • fresh basil to garnish

  • Meat thermometer

Method
 

  1. Preheat the oven to 400°F. Heat 2 tablespoons olive oil in a large heavy-duty oven-safe skillet over medium-high heat. Add the onion and cook for 2-3 minutes or until softened and the edges are slightly golden. Add the garlic and sauté for 30 seconds then add the crushed tomatoes and spices. Sauté for 2 minutes.
  2. Pat the chicken breasts dry with paper towels, then nestle them into the tomato sauce and cook for 1-2 minutes per side to sear.
  3. Transfer the pan to the oven and bake for 10 minutes. Remove carefully using oven mitts, flip the chicken breasts over and top with fresh mozzarella slices or shredded mozzarella.
  4. Bake another 10 minutes or until chicken is cooked through to an internal temperature of 165°F.
  5. Remove from oven and let rest for 2-3 minutes. Garnish with fresh basil and serve immediately.

Notes

Must use oven-safe skillet for this recipe. Check internal temperature reaches 165°F for food safety. Can use either fresh mozzarella slices or shredded mozzarella. Use your favorite marinara sauce as alternative to crushed tomatoes. Store leftovers in airtight container in refrigerator for up to 3-4 days.
